Cardamom-Scented Pumpkin Soup

Ingredients:
1 medium kabocha squash
1 medium pumpkin
3 shallots, chopped
2 garlic cloves, minced
4 leeks, whites only, chopped
6 cups chicken stock
2 cinnamon sticks
8 cardamom pods, crushed and toasted
½ star anise
2 tablespoons cumin seeds, toasted
1 quart heavy cream
7 thyme sprigs
½ cup maple syrup
For garnish (optional):
Toasted pumpkin seeds
Pumpkin seed oil
