Ranger Cookie Bars
Yield About 4 times more than you should eat
Almonds 1 ½#
Coconut ½ lb
Butter 2# 8oz
Sugar 1# 12oz
Brown Sugar 1#
Eggs 8 each
Vanilla Extract 2 Tbl
A.P. Flour 2# 12oz
Baking Soda 8 tsp
Salt 2 tsp
Chocolate Chips 3#
Raisins 3# 12oz
Roast the pecans and almonds to a golden brown and set aside to cool.
In a medium sized mixer fitted with a paddle attachment cream together the butter, sugar and brown sugar until there are no butter streaks left.
Add the eggs and vanilla.
Scrape the bowl and mix to incorporate.
Add the flour, baking soda and salt then mix to blend.
Add the chocolate chips, raisins and the cooled nuts. Mix to blend well.
Scoop into preferred sized cookies and bake or store in refrigerator.

For bars, place in 9x13 pan until about 3/4 inch thick. Bake at 325 degree for appx 20 minutes until light golden brown and firm.
