BK's Peanut Butter Chocolate Bread Pudding
What's better than rescuing 1,400 pounds of croissant dough? Turning that 1,400 pounds of rescued croissant dough into some delicious, home made Peanut Butter Chocolate Bread Pudding!

Milk.............................................................................1/2 cup
Heavy Cream.......................................2 cups
Sugar....................................................................1/2 cup
Vanilla.................................................................1 tsp
Creamy Peanut Butter........1/4 cup
Eggs........................................................................3 each
Croissants, day old.....................6 each
Chocolate Chips..............................1/2 cup
Directions:
In a mixing bowl combine the milk, cream, sugar and vanilla until blended.
Add the peanut butter and mix with a whisk until fairly well blended. You will see streaks of peanut butter. These will disappear during the baking.
Add the eggs and mix until they are well incorporated.
Chop up the day old croissants (or other bread if desired) and add this to the wet ingredients. Let soak for two hours. The mix may need more bread depending on the size of croissants or bread used.
Add the chocolate chips to incorporate. Mix up the mixture and pour into the desired baking pan or mold.
Place this on a pan with a little water in the bottom and in a 325 degree oven and bake until the top is golden and the pudding feels set.
Let cool slightly before serving and ENJOY!
